6 Once the first frying pan is warmed, add the chicken, salt, and pepper to taste. Brown the chicken on both sides until cooked through. Transfer the cooked chicken to a separate plate and keep warm. Repeat until all chicken cutlets are cooked.
7 Add enough vegetable oil to the second frying pan to cover the bottom. Dip the eggplant slices first in the beaten egg, then in the breadcrumbs, ensuring both sides are evenly coated.
8 Place the coated eggplant slices in the frying pan and cook until golden brown on both sides. Transfer the cooked eggplant to a separate plate and keep warm. Repeat until all eggplant slices are cooked.
9 Once all the chicken is cooked, add 1/2 cup of water to the hot pan and scrape off any remaining bits from the bottom. Increase the heat to high, bring to a boil, and let it reduce for a couple of minutes.
10 Add 1/2 cup of white wine or white cooking wine to the pan. Allow it to boil and reduce by about half. Reduce the heat to low.

12 Place the baking sheet under the broiler and broil until the cheese is melted and bubbly.
