Adapted from a recipe found in a Senior Spotlight newspaper, this version uses skim milk and fat-free, low-sodium chicken broth to keep it lighter. Ingredients:

  • 8 oz cooked ham, diced
  • 1 onion, chopped
  • 1 tbsp butter
  • 1 1/2 lbs potatoes, peeled and diced
  • 2 cups chicken broth
  • 1 tbsp Dijon mustard
  • 1 1/2 cups milk
  • 1 cup Velveeta cheese, cubed
  • 3-4 oz sharp cheddar cheese, shredded
  • 1/4 tsp garlic powder
  • 1/4 tsp seasoning salt

Instructions:

Step Description
1 In a large saucepan over medium-high heat, sauté ham and onions in the butter until the onions are translucent.
2 Stir in the Dijon mustard, then pour in the chicken broth.
3 Add the diced potatoes, bring to a boil, and cook until the potatoes are tender.
4 Lower the heat and add the milk, stirring until combined.
5 Add both cheeses gradually, stirring constantly until melted and creamy.
6 Season with garlic powder and seasoning salt, adjusting to taste.
7 Simmer the soup until warmed through, but avoid boiling.
8 Serve hot, garnished with extra shredded cheddar if desired, and accompany with warm bread or rolls.
