This delightful recipe for Idaho Potatoes Supreme comes from my dear friend Crystal. It’s a dish that’s perfect for a comforting supper and has quickly become a favorite in our household. Creamy, cheesy, and packed with flavor, it’s sure to be a hit at your table too!
Ingredients:
- 8 medium potatoes, cooked with jackets on until almost done or use leftover baked potatoes
- 1/4 cup margarine
- 1 cup sour cream
- 1 1/2 teaspoons salt
- 1/2 cup chopped green onions
- 3 dashes pepper
- 1 1/4 cups shredded sharp cheddar cheese, divided
- 1/2 cup crushed corn flakes
Instructions:

Prepare Potatoes:
- Cook the potatoes with their jackets on until they are almost done. Alternatively, you can use leftover baked potatoes.

Prepare Mixture:
- Peel the cooked potatoes, allow them to cool, and then grate them coarsely.

Combine Ingredients:
- In a large mixing bowl, combine the grated potatoes with margarine, sour cream, salt, chopped green onions, pepper, and 3/4 cup of the shredded sharp cheddar cheese. Reserve the remaining 1/2 cup of cheese and the crushed corn flakes for later.

- Gently blend the potato mixture until all ingredients are well combined.

- Preheat your oven to 350°F (175°C).
- Transfer the potato mixture into a baking dish and spread it evenly.
