Description:

Looks like “junk food” but are a good way to sneak some veggies into your (or your kids) diet. Also great for game day. I make them for our poker parties or anytime we want a “good for you” snack.

Ingredients:

  • 1 zucchini
  • 1 onion
  • 1 bell pepper
  • 1 garlic clove
  • 3 carrots
  • 2 cups shredded cheese
  • 1 bunch green onions
  • 3 flour tortillas
  • Salt, to taste
  • Pepper, to taste

Instructions:

  1. Prep the Pan: Spray a pan with cooking spray and heat it over medium heat.

  2. Cook Veggies: Add all veggies except jalapeños and green onions to the pan and cook until tender, which should take about 3-5 minutes. Season with salt and pepper to taste.

  3. Prep the Grill: While the veggies are cooking, heat a grill (or another frying pan) and spray it with cooking spray.

  4. Fill the Tortillas: Place a tortilla in the heated pan and fill one side with about 1/2 cup of the cooked veggies.

  5. Add Cheese and More: Sprinkle shredded cheese, jalapeños, and sliced green onions over the veggies. Fold the empty half of the tortilla over the filled side.

  6. Grill the Quesadillas: Grill the quesadilla for approximately 45 seconds to 1 minute on one side, depending on the heat. Then, carefully flip it over and grill the other side until golden and crispy.

  7. Slice and Serve: Remove the quesadilla from the pan and cut it into wedges or halves.

  8. Serve: Serve the veggie quesadillas with salsa and sour cream on the side, if desired.

These veggie quesadillas are not only delicious but also a sneaky way to get some extra veggies into your diet. They’re perfect for a quick lunch, snack, or even as a crowd-pleasing appetizer at parties. Enjoy the Tex-Mex flavors and the cheesy goodness without the guilt!
