Veggie Quesadillas Recipe

Looks like “junk food” but are a good way to sneak some veggies into your (or your kids) diet. Also great for game day. I make them for our poker parties or anytime we want a “good for you” snack.

Ingredients:
- 1 zucchini
- 1 onion
- 1 bell pepper
- 1 garlic clove
- 3 carrots
- 2 cups shredded cheese
- 1 bunch green onions
- 3 flour tortillas
- Salt, to taste
- Pepper, to taste
Instructions:

Prep the Pan: Spray a pan with cooking spray and heat it over medium heat.

Cook Veggies: Add all veggies except jalapeños and green onions to the pan and cook until tender, which should take about 3-5 minutes. Season with salt and pepper to taste.

Prep the Grill: While the veggies are cooking, heat a grill (or another frying pan) and spray it with cooking spray.

Fill the Tortillas: Place a tortilla in the heated pan and fill one side with about 1/2 cup of the cooked veggies.

Add Cheese and More: Sprinkle shredded cheese, jalapeños, and sliced green onions over the veggies. Fold the empty half of the tortilla over the filled side.

Grill the Quesadillas: Grill the quesadilla for approximately 45 seconds to 1 minute on one side, depending on the heat. Then, carefully flip it over and grill the other side until golden and crispy.

Slice and Serve: Remove the quesadilla from the pan and cut it into wedges or halves.

Serve: Serve the veggie quesadillas with salsa and sour cream on the side, if desired.
