Though the chips may be elusive in some areas, if you’re fortunate enough to track them down, these cookies are truly a delight!

Ingredients:

  • 2 1/4 cups flour
  • 1/8 teaspoon salt
  • 1 cup butter
  • 1/2 cup margarine
  • 1 cup sugar
  • 1 egg
  • 3/4 cup cornflakes
  • 5 ounces cherry chips

Instructions:

1 In a mixing bowl, cream together the butter, sugar, egg, and flavoring until smooth and well combined.
2 Add the flour and salt to the creamed mixture, stirring until fully incorporated.
3 Gently fold in the cornflakes and cherry chips until evenly distributed throughout the dough.
4 Roll the dough into 1-inch balls and place them onto ungreased cookie sheets, spacing them apart to allow for spreading during baking.
5 Using a fork, press each ball lengthwise and crosswise to flatten slightly, creating a classic crisscross pattern on top. Sprinkle the cookies lightly with granulated sugar for added sweetness and texture.
6 Preheat your oven to 375°F (190°C).
7 Bake the cookies in the preheated oven for 10 to 12 minutes, or until they are lightly golden around the edges.
8 Remove the cookies from the oven and transfer them to a wire rack to cool slightly.
