Ingredients:
- 1/2 cup butter
- 1/2 cup granulated sugar
- 1/3 cup brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- For Topping:
- 2 tablespoons granulated sugar
- 1 teaspoon cinnamon
Instructions:
- In a large bowl, cream together the butter, granulated sugar, and brown sugar at high speed until light and fluffy.
- Add the egg and vanilla extract, and beat until smooth.
- In another bowl, combine the flour, salt, baking soda, and cream of tartar.
- Pour the dry ingredients into the wet ingredients and mix until well combined.
- Preheat the oven to 300°F (150°C) while you let the dough rest in the refrigerator for 30-60 minutes.
- In a small bowl, combine the granulated sugar and cinnamon for the topping.
- Take about 2 1/2 tablespoons of dough and roll it into a ball.
- Roll the dough ball in the cinnamon-sugar mixture until coated, then press it onto a greased cookie sheet.
- Bake the cookies for 10-12 minutes, no more. They may seem undercooked, but they will continue to develop as they cool.
- Do not roll the dough balls too large, as they may not cook through in the allotted time. If unsure, err on the side of smaller balls.
- If the cookies don’t turn out perfectly the first time, don’t worry! It’s a very forgiving recipe, and it may take a couple of tries to get the cooking time just right.
