Description:

I created this Pepper Medley recipe one day when I found myself with an abundance of peppers after a shopping spree at the market. This dish is a delightful mix of colorful peppers, carrots, onions, and garlic, seasoned with a hint of brown sugar and sesame seeds. It’s a quick and flavorful addition to any meal, perfect for vegans and those following a kosher diet. Plus, it’s ready in under 15 minutes!

  • 1 orange bell pepper
  • 1 purple bell pepper
  • 1 carrot
  • 1 onion

Recipe Instructions:

  1. Prepare Ingredients: Begin by cutting the peppers into strips. Peel the carrot and slice it into very thin strips. Chop the onion and mince the garlic.

  2. Stir-Fry: Heat oil in a skillet over medium-high heat. Add the sliced peppers and carrots, along with the chopped onion. Stir-fry until the onion becomes translucent, about 3-4 minutes.

  3. Add Garlic: Once the vegetables are tender, add the minced garlic to the skillet. Continue to fry for an additional minute, stirring constantly to prevent burning.

  4. Season: Sprinkle the brown sugar and sesame seeds over the vegetables in the skillet. Season with salt to taste. Stir-fry for one more minute to allow the flavors to meld together.

  5. Serve: Remove the skillet from the heat and transfer the Pepper Medley to a serving dish. Serve hot as a side dish or as a topping for rice or noodles. Enjoy your colorful and flavorful creation!
