- 1 pound fresh green beans
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 garlic cloves, minced
- 2 shallots, thinly sliced
- 2 bay leaves
- 2 tablespoons fresh thyme leaves
- 1 tablespoon flour
- 3 cups milk

Instructions:

- Remove the vegetables from the boiling water and immediately plunge them into ice water to stop the cooking process.
- Drain the green beans and onions, then remove the skins from the onions and set aside.

- In a skillet, heat olive oil and butter over medium heat.
- Add minced garlic and sliced shallots, and cook until caramelized.
- Stir in bay leaves, then add the mushrooms and thyme leaves. Season with salt and pepper.
- Sprinkle the mixture with flour and cook for an additional minute.

- Bring the mixture to a boil and cook for 3 minutes until it thickens.
