Homemade Cow’s Milk Ice Cream
Ingredients:
- 1 liter fresh cow’s milk
- 30 grams cornstarch
- 200 grams granulated sugar
- 1 sachet sweetened condensed milk (white)
- 1/2 tablespoon SP (emulsifier)
- Flavoring pastes of your choice (e.g., strawberry and grape)
Instructions:
-
Prepare the Ice Cream Base:
- In a medium saucepan, combine the fresh cow’s milk, granulated sugar, sweetened condensed milk, and cornstarch (dissolved in a small amount of water beforehand).
- Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble.
- Once the mixture reaches a gentle boil, continue to cook for a few more minutes to ensure the cornstarch is fully cooked and the mixture is smooth.
- Remove from heat and let the mixture cool to room temperature.
-
Freeze the Base:
- Pour the cooled mixture into a shallow container and place it in the freezer until completely frozen.
-
First Mixing:
- Once frozen, remove the mixture from the freezer and use a fork to break it into chunks.
- Place the chunks into a mixing bowl. Add the SP (previously melted) and beat with a mixer on high speed for about 15 minutes until the mixture becomes soft and fluffy.
-
Flavoring:
- Divide the fluffy mixture into two parts (or more if you want to use multiple flavors).
- Add your desired flavoring pastes to each part, folding them in gently until evenly distributed.
-
Final Freeze:
- Transfer the flavored mixtures into separate containers and place them back in the freezer.
- Freeze until solid and ready to serve.
