Ingredients:
- 1/2 kg chicken, cleaned and cut into pieces
- 1 potato, diced
- 1 medium tomato, diced
- 1 medium carrot, sliced like flowers
- Ground spices:
- 5 shallots
- 3 cloves garlic
- 3 candlenuts
- 1 segment ginger
- 1 segment turmeric
- Salt, to taste
- 1 tsp coriander
- 2 lemongrass, bruised
- 1 segment galangal, bruised
- Bay leaves and kaffir lime leaves, as needed
- Sufficient water
- Sugar, salt, and seasoning to taste
- 1 medium-sized coconut milk (such as Kara)

Heat oil in a pan, sauté the ground spices until fragrant. Add bay leaves, kaffir lime leaves, lemongrass, galangal, and water. Let it boil.

Add chicken, potatoes, and carrots. Let it boil briefly, then add sugar, salt, and seasoning to taste. Cook until the chicken, carrots, and potatoes are tender.

Once the chicken is tender, add coconut milk. Stir gently to avoid breaking the coconut milk. Add tomatoes, adjust the seasoning, and serve hot with warm rice.
