Preparation Steps

  1. Prep the Vegetables: Start by cleaning and cutting all the vegetables into 1-inch diagonal pieces. This helps them cook evenly and enhances the dish’s visual appeal.

  2. Stir Fry the Veggies: In a skillet, melt 1 tablespoon of butter over medium heat. Add the carrot, green bell pepper, baby corn, green beans, and cauliflower. Stir-fry for about 5 minutes until the vegetables are tender yet retain a slight crunch. Remove from heat and set aside.

  3. Prepare the Spice Mix: In a heavy-bottomed pan, heat the remaining tablespoon of butter over medium heat. Add the cloves, cardamom, cinnamon, black pepper, dry red chillies, coriander seeds, and cashew nuts. Sauté for a few seconds until fragrant.

  4. Add Aromatics: To the spice mixture, add the minced garlic, grated ginger, green chilli, and finely chopped onions. Cook until the onions turn a lovely golden brown.

  5. Make the Paste: Turn off the heat and let the mixture cool slightly. Transfer it to a mixer jar and blend to a smooth paste, adding a little water if necessary. Set this paste aside.

  6. Cook the Gravy: In the same heavy-bottomed pan, melt some butter over medium flame. Add the salt, turmeric powder, Kashmiri red chilli powder, cumin powder, and garam masala. Mix well, and then incorporate the freshly ground masala paste. Cook this for 3-4 minutes, stirring occasionally.

  7. Add Tomato Puree: Pour in the homemade tomato puree and bring the mixture to a brisk boil. The gravy should begin bubbling and thickening.

  8. Finish the Dish: Lower the heat and add fresh cream, stirring until well combined. Gently fold in the sautéed vegetables, cover, and let it simmer for about 5 minutes on low heat. Adjust the salt and spices according to your taste. If the gravy is too thick, you can adjust the consistency by adding a little milk.

  9. Serve: Transfer the Veg Makhanwala to a serving bowl. Top with a pat of butter for an extra touch of richness. Serve hot alongside creamy Dal Makhani, Tawa Paratha, and Boondi Raita spiced with black salt for a festive dining experience.

  10. Pair with a Sweet Ending: To complete this North Indian feast, consider ending your meal with a deliciously rich and satisfying dessert like Shahi Tukda.

Cooking Tips

  • Vegetable Choices: Feel free to customize the vegetables based on your preference or seasonal availability. Peas, mushrooms, or zucchini can also be great additions.
  • Cream Alternatives: For a lighter version, you can replace fresh cream with yogurt, but be sure to temper it to avoid curdling.
  • Make Ahead: The Veg Makhanwala can be prepared in advance and reheated, which allows the flavors to meld beautifully.

Embrace the warmth and comfort of this Veg Makhanwala, a dish that not only pleases the palate but also nourishes the soul. Enjoy your cooking adventure!
