Chicken and Egg Roll Skewers (Sempol Ayam Telur Gulung)

Ingredients:

  • 300 grams of finely ground chicken thigh
  • 2 cloves of garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon mushroom bouillon powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon sugar
  • 1 stalk green onion, finely sliced
  • 3 tablespoons tapioca flour (or sago flour)
  • 3 tablespoons all-purpose flour
  • Bamboo skewers, as needed
  • 2 eggs, beaten and seasoned with a pinch of salt
  • Cooking oil, for frying
  • Bangkok chili sauce, for serving (optional)

Instructions:

  1. Prepare the Chicken Mixture: In a large mixing bowl, combine the finely ground chicken thigh with the minced garlic, salt, mushroom bouillon powder, ground black pepper, and sugar. Mix well until all ingredients are fully integrated.

  2. Add Green Onions and Flours: Stir in the finely sliced green onion until evenly distributed. Gradually incorporate the tapioca flour and all-purpose flour into the mixture, continuing to mix until the batter achieves a smooth and cohesive texture.

  3. Skewer the Mixture: Take small portions of the chicken mixture and mold them onto bamboo skewers. Press gently to ensure the mixture adheres well to the skewers. Repeat this process until all of the chicken mixture has been used.

  4. Blanch the Skewers: In a pot of boiling water, briefly immerse the skewers to cook the chicken mixture. Once they are partially cooked (about 2-3 minutes), remove the skewers and drain them. At this stage, you can let them cool and store them in the refrigerator if you’re not ready to cook them immediately.

  5. Fry the Skewers: Heat a generous amount of cooking oil in a pan over medium heat. Fry the skewers until they are lightly browned and cooked through, about 3-4 minutes. Remove from the oil and set aside on a paper towel to drain excess oil.

  6. Coat with Egg: Pour a small amount of beaten egg into the hot oil. Gently roll each fried skewer in the egg, ensuring an even coating. Press the skewers against the sides of the pan to help the egg adhere and create a crisp layer. Fry until the egg is golden and set, then transfer to a paper towel to drain.

  7. Serve: Arrange the chicken and egg roll skewers on a serving plate. Serve them warm with a side of Bangkok chili sauce or your preferred dipping sauce.
