Crispy Simple Eggs Recipe

Ingredients:

  • 2 eggs
  • A pinch of salt
  • Black pepper (optional)

Instructions:

  1. Prepare the Egg Mixture: In a bowl, crack one egg and whisk it thoroughly until well blended. Add a pinch of salt and, if desired, a dash of black pepper. Continue whisking until the mixture becomes frothy and slightly bubbly.

  2. Heat the Oil: In a frying pan, heat a generous amount of oil over medium-high heat. The oil should be hot but not smoking. You’ll need enough oil to submerge the eggs partially.

  3. Fry the Egg Mixture: Pour the egg mixture into the hot oil. As you pour, gently stir the mixture with a fork (or chopsticks or a spoon) in a circular motion to ensure it cooks evenly and forms crispy, lace-like edges. Continue stirring until the entire egg mixture has been poured into the pan. Let the egg cook undisturbed until it becomes golden and crispy on one side, then carefully flip it over to cook the other side. For extra crispiness, you can let it fry a bit longer, but be careful not to burn it.

  4. Drain and Serve: Once both sides are crispy and golden brown, remove the egg from the pan and drain excess oil on a paper towel. Repeat the process with the second egg. Serve immediately while hot.
