Sempol Ayam: Indonesian Chicken Skewers
Ingredients:
- 500 g chicken meat
- 2 tablespoons all-purpose flour
- 8 tablespoons tapioca flour
- 2 eggs
- 1 teaspoon ground pepper
- 1/2 tablespoon oyster sauce
- 1 stalk green onion, finely sliced
- 8 cloves garlic, minced
- 2 tablespoons fried shallots
- Salt, to taste
- Sugar, to taste
- Cooking oil, for frying
Instructions:
-
Prepare the Chicken Mixture: Begin by finely chopping the chicken meat using a food processor or chopper until it is smooth and consistent. Transfer the chicken into a large mixing bowl.
-
Combine Ingredients: To the chicken, add the all-purpose flour, tapioca flour, eggs, ground pepper, oyster sauce, finely sliced green onion, minced garlic, fried shallots, salt, and sugar. Mix thoroughly until all ingredients are well combined and the mixture is smooth.
-
Shape the Sempol: With your hands or a spoon, form the chicken mixture into elongated shapes around skewers or satay sticks. Ensure they are firm and evenly shaped.
-
Boil the Sempol: Bring a pot of water to a boil. Carefully place the shaped chicken skewers into the boiling water. Cook until they float to the surface, indicating they are cooked through. Remove them from the water and let them cool.
-
Prepare for Frying: Beat the remaining eggs in a bowl. Dip each sempol into the beaten eggs, ensuring they are coated well.
-
Fry the Sempol: Heat a generous amount of cooking oil in a frying pan over medium heat. Fry the coated sempol until they turn golden brown and crispy on the outside. This should take about 3-4 minutes on each side.
-
Serve: Once fried, remove the sempol from the oil and drain on paper towels to remove excess oil. Serve warm with your choice of dipping sauces such as sambal (chili sauce) or tomato sauce.
