Description:
Adapted from a recipe in Cooking Light, these yummy, filling, healthy muffins are the perfect alternative to cereal. If you don’t like dates, any dried fruit will work.

Ingredients:

  • 1 cup rolled oats
  • 2 cups low-fat buttermilk
  • 1 2/3 cups whole wheat flour
  • 3/4 cup brown sugar
  • 2 tablespoons canola oil
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 2/3 cup chopped dates

Instructions:

  1. Prepare Oats: Combine oats and buttermilk in a bowl, cover, and refrigerate for 8 hours to allow the oats to soften and absorb the buttermilk.

  2. Preheat Oven: Before baking, preheat your oven to 350°F (175°C).

  3. Mix Dry Ingredients: In a large mixing bowl, combine the whole wheat flour, softened oats with buttermilk, brown sugar, canola oil, baking powder, baking soda, salt, and eggs.

  4. Blend Smoothly: Using a hand mixer or stand mixer on medium speed, beat the mixture until smooth and well combined. This should take about 2-3 minutes.

  5. Fold in Dates: Gently fold in the chopped dates into the batter until evenly distributed.

  6. Prepare Muffin Tin: Line muffin tins with paper liners or grease them lightly to prevent sticking.

  7. Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about 2/3 full.

  8. Bake: Place the muffin tin in the preheated oven and bake at 350°F (175°C) for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  9. Cool and Serve: Once baked, remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
