Description:
Adapted from a recipe in Cooking Light, these yummy, filling, healthy muffins are the perfect alternative to cereal. If you don’t like dates, any dried fruit will work.
Ingredients:
- 1 cup rolled oats
- 2 cups low-fat buttermilk
- 1 2/3 cups whole wheat flour
- 3/4 cup brown sugar
- 2 tablespoons canola oil
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 2/3 cup chopped dates
