Ingredients

  • 1 whole bandeng fish (bones removed)
  • 1 egg
  • 3 shallots
  • 2 cloves garlic
  • 1/2 thumb-sized piece of ginger
  • Salt to taste
  • Pepper to taste
  • Coriander to taste
  • Granulated sugar to taste
  • Optional: red chili peppers (for added heat)

Instructions

  1. Prepare the Fish Mixture:

    • Place the bandeng fish in a blender and blend until smooth. Ensure that the fish is completely pureed for a consistent texture.
  2. Prepare the Spice Blend:

    • Peel and chop the shallots and garlic. Peel and slice the ginger. Blend these ingredients together until finely ground.
  3. Combine Ingredients:

    • Mix the blended spices with the pureed fish. Add salt, pepper, coriander, and sugar according to your taste preferences. If you enjoy spicy flavors, you can also add finely chopped red chili peppers at this stage.
  4. Incorporate the Egg:

    • Crack the egg into the fish and spice mixture. Stir thoroughly to combine, ensuring the egg is evenly distributed throughout the mixture.
  5. Steam the Mixture:

    • Transfer the mixture into a heatproof dish and steam for approximately 15 minutes. This process will cook the mixture and set its texture.
  6. Prepare the Satay:

    • Once the steaming is complete and the mixture has set, remove it from the heat and allow it to cool slightly. Cut the set mixture into bite-sized pieces and skewer them onto sticks to form satay.
  7. Grill the Satay:

    • Preheat your grill or grill pan. Grill the satay skewers over medium heat until they are golden brown and slightly crispy on the outside. This will typically take a few minutes on each side.
  8. Serve:

    • Serve the bandeng satay hot, with your choice of sambal or dipping sauce to enhance the flavors.

Enjoy this delightful satay with your favorite sambal for an authentic and satisfying meal! 😊
