Telur Gulung Korea (Gyeran Mari)

Ingredients:

  • 3 large eggs
  • 1 small carrot, finely chopped (optional if not available)
  • 3 thin cabbage leaves, finely chopped
  • 2 green onions, finely sliced
  • 1 clove garlic, minced (optional if you don’t like the smell)
  • 1/2 teaspoon salt
  • 1/2 teaspoon bouillon powder

Instructions:

  1. Prepare the Ingredients: Finely chop all the vegetables. Beat the eggs until the yolks and whites are well combined and slightly frothy. Add in all the chopped vegetables, salt, and bouillon powder. Mix everything well.

  2. Cook the Egg Mixture:

    • Step 1: Heat a non-stick skillet over medium heat. Pour in about one-third of the egg mixture, spreading it evenly across the skillet. Allow it to cook until the top begins to set but is still slightly wet. Carefully roll the egg from one side to the other, leaving a small unrolled portion.

    • Step 2: Pour in another third of the egg mixture next to the unrolled portion. Cook until the top is almost set, then continue rolling the egg, incorporating the new layer. Repeat this process, ensuring the rolls are tight and the egg remains slightly wet to avoid gaps.

    • Step 3: Pour in the remaining egg mixture and cook until it is almost set. Finish rolling the egg into a complete roll. Allow it to cook for a few more moments to ensure the roll is fully cooked through.

  3. Slice and Serve: Remove the egg roll from the skillet and let it cool slightly. Slice the roll into even pieces, being careful not to cut too thin to avoid tearing. Serve and enjoy your homemade Telur Gulung Korea (Gyeran Mari)!
