Instructions

  1. Preparation: Start by putting on some kitchen gloves to protect your hands from the heat of the chillies. Wash the large green chillies thoroughly, then remove the stems and cut them into large chunks.

  2. Ginger Prep: Rinse the ginger root under running water, then slice it into small pieces.

  3. Sautéing Spices: In a medium-sized pan, heat the oil over medium heat. Once the oil is hot, add the cumin seeds and asafoetida. Sauté them until fragrant, which should take about 1-2 minutes.

  4. Cooking Chillies and Ginger: Add the chunks of green chillies and the chopped ginger to the pan. Stir in the salt, ensuring everything is well combined. Cook for about 2 minutes, allowing the flavors to meld.

  5. Simmering: Pour in 70 ml of water and cover the pan with a lid. Reduce the heat to low and let it simmer gently for approximately 15 minutes, stirring occasionally. The chillies should become soft and tender during this time.

  6. Reducing the Sauce: After about 15 minutes, remove the lid and allow the mixture to reduce for a few minutes, stirring frequently to prevent sticking. Once it has thickened slightly, take it off the heat and let it cool.

  7. Blending: Transfer the cooled mixture into a blender. Gradually pour in the white vinegar while blending until the sauce reaches a smooth consistency. Adjust the amount of vinegar to suit your taste preference.

  8. Storage: Pour the freshly made green chilli sauce into a clean, dry jar. Seal it tightly. This sauce can be stored in the refrigerator for 2-3 months, allowing you to enjoy its vibrant flavor over multiple meals.
