Fragrant Chicken Nasi Kebuli Recipe

Ingredients:

  • 1 whole chicken, cut into 12-14 pieces
  • 500g rice
  • 500ml water
  • 50-75g raisins, washed
  • Fried shallots for garnish
  • 3 cinnamon sticks
  • 3 lemongrass stalks, bruised
  • 8 cloves
  • 4 cardamom pods
  • 3 star anise
  • 2 tsp salt
  • 1 tsp broth powder (optional)

Spice Paste:

  • 10 shallots
  • 5 cloves garlic
  • 1/2 nutmeg, grated
  • 3 cm ginger
  • 1 tbsp coriander seeds, toasted
  • 1 tsp toasted peppercorns
  • 1/2 tsp toasted cumin seeds

Steps:

  1. Prepare the Chicken:

    • Rinse the chicken pieces thoroughly and set aside.
  2. Cooking the Chicken:

    • In a large pot, combine the chicken pieces with the spice paste. Stir well to coat the chicken. Add 400ml water, cover the pot, and cook until the chicken is tender. Adjust seasoning if needed with salt.
  3. Cooking the Rice:

    • Rinse the rice and place it in the rice cooker. Add the chicken broth from cooking the chicken and additional water as needed. Add salt to taste. Cook the rice in the rice cooker until done. Once cooked, add the washed raisins and mix gently. Close the rice cooker and allow the raisins to plump up.
  4. Frying the Chicken:

    • Heat cooking oil in a frying pan. Fry the cooked chicken pieces until golden brown and slightly crispy. Remove from oil and drain on paper towels.
  5. Serve:

    • Arrange the fragrant Nasi Kebuli on a serving platter and top with the crispy fried chicken pieces. Garnish with fried shallots. Serve hot and enjoy!
