Ayam Goreng Lengkuas (Galangal Fried Chicken)
Ingredients:
- 150 grams grated galangal
- 1 whole chicken, cleaned and cut into pieces
- 3 bay leaves
- 1 stalk lemongrass, bruised
- 400-500 ml water
- Chicken bouillon powder, to taste
- Salt, to taste
- Sugar, to taste
Spice Paste:
- 9 shallots
- 4 cloves garlic
- 1 cm piece of galangal
- 2-3 cm piece of turmeric, peeled and roasted
- 1 cm piece of ginger, peeled
- 2 candlenuts
- 1/2 tsp ground coriander
- 1/4 tsp ground pepper
Instructions:
- Prepare the Spice Paste: Grind the shallots, garlic, galangal, roasted turmeric, ginger, candlenuts, ground coriander, and ground pepper into a smooth paste.
- Sauté the Spice Paste: In a large pan, sauté the spice paste until fragrant. Add the bay leaves, bruised lemongrass, and grated galangal. Continue to sauté until the spices are fully cooked.
- Cook the Chicken: Add the chicken pieces to the pan and stir well to coat with the spice mixture. Pour in the water and bring to a boil.
- Season the Dish: Add sugar, salt, and chicken bouillon powder to taste. Stir well and taste to adjust the seasoning if necessary.
- Simmer the Chicken: Reduce the heat to low, cover the pan, and simmer the chicken until it is tender and the water has reduced significantly.
- Fry the Chicken: Remove the chicken pieces from the pan. In a separate frying pan, heat oil over medium-high heat and fry the chicken pieces until golden brown and crispy.
- Fry the Remaining Spices: After frying the chicken, fry the remaining spice mixture until crispy.
