Golden Crispy Pomfret in Sweet & Tangy Sauce

Sweet and Sour Pomfret (Ikan Bawal Asam Manis)

Ingredients:

  • 1 pomfret fish (about 500g), cleaned and scored
  • 1/2 onion, sliced
  • 2 shallots, sliced
  • 4 cloves garlic, sliced
  • 5 red chilies, sliced
  • 3 green chilies, sliced
  • 2 cm ginger, sliced
  • 1 tbsp tomato sauce
  • 2 tomatoes, sliced
  • 1/2 tbsp sugar
  • Salt, to taste
  • Spring onions, chopped

Instructions:

  1. Marinate the pomfret fish with lime juice and let it sit for 15 minutes. Heat oil in a pan over medium-high heat, then fry the fish until golden brown. Set aside.

  2. In the same pan, sauté the onion, shallots, and garlic until fragrant. Add the red chilies, green chilies, and ginger, stirring until well combined.

  3. Add the tomatoes and a little water. Season with salt and sugar, then add the spring onions. Mix well.

  4. Gently place the fried pomfret fish into the pan, coating it with the sauce. Allow the fish to absorb the flavors briefly.

  5. Serve hot, garnished with additional spring onions if desired.
