Chinese Foil Wrapped Chicken Recipe

Ingredients:

  • 8 chicken thighs
  • 4 boneless, skinless chicken breast halves

  • 1 garlic clove
  • 1/2 teaspoon Chinese five spice powder

Instructions:

  1. Prepare Chicken: If using chicken thighs, remove the skin and cut each thigh through the bone crosswise in half. For boneless, skinless chicken breast halves, cut them into 2-inch pieces, yielding 16 pieces in total. Rinse the chicken pieces and blot them dry with paper towels. Trim the scallions and cut each into 2-inch sections.

  2. Make Marinade: In a heavy saucepan, combine the soy sauce, sugar, rice wine, minced garlic, and Chinese five spice powder. Bring the mixture to a boil over medium heat, stirring continuously. Let it boil until thick and syrupy, which should take about 5 minutes. Transfer the mixture to a bowl and allow it to cool to room temperature. Add the chicken pieces to the marinade, toss to coat thoroughly, and let marinate covered in the fridge for 2-4 hours.

  3. Preheat Grill: Preheat your grill to high heat. While the grill is heating up, cut 16 6-inch squares of aluminum foil and place them (shiny side down) on your work surface.

  4. Assemble Chicken Packets: Drain the marinated chicken, reserving the marinade. Place a piece of chicken and a piece of scallion in the center of each foil square.
