Recipe Instructions
For the Sauce:
- Saute Onion: In a heavy saucepan, saute the onion in olive oil until soft and translucent.
- Add Tomatoes: Stir in the diced tomatoes, garlic, and tomato paste.
- Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes, adding water if the sauce becomes too thick.
- Season: Season the sauce with salt, then add fresh basil, stir well, and remove it from the heat.
For the Patties:
- Prepare Mixture: In a mixing bowl, combine all the ingredients for the patties except for the olive oil.
- Heat Oil: Heat olive oil in a 12-inch skillet over medium heat.
- Cook Patties: Working in batches, drop rounded tablespoons of the egg mixture into the skillet. Cook the patties until they are golden and puffed, about 2 minutes per side.
- Drain and Repeat: Drain the cooked patties on paper towels, and add more olive oil to the skillet as needed to continue cooking the remaining batches.
To Finish:
- Combine: Add the prepared tomato sauce and the cooked patties back into the skillet.
- Simmer: Allow them to simmer together, turning the patties once, for about 5 minutes in total.
Serving Suggestions
