Ingredients

  • 4 tablespoons sesame seeds
  • 2/3 cup hazelnuts
  • 1/2 cup cashews
  • 1/2 cup chickpeas
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 3 twists of freshly ground black pepper
  • 1 teaspoon paprika

Instructions

  1. Prepare the Flatbread: Preheat your oven to 350°F (175°C). Place the pitas on a baking sheet and bake for about 10 minutes, or until they are crisp and lightly browned. Remove from the oven and break into pieces suitable for dipping.

  2. Toast the Sesame Seeds: In a dry skillet over medium heat, toast the sesame seeds until they turn golden brown and aromatic. Transfer them to a bowl and set aside.

  3. Toast the Nuts and Chickpeas: Using the same skillet, add the hazelnuts and chickpeas. Toast them for 4-5 minutes until they become fragrant. Stir occasionally to ensure even toasting.

  4. Toast the Spices: To the skillet, add the cumin seeds, dried thyme, and continue to toast until the seeds darken slightly and release their aroma. Remove from heat and let cool for a few minutes.

  5. Combine and Season: In a food processor or using a mortar and pestle, combine the toasted sesame seeds, hazelnuts, chickpeas, cumin seeds, dried thyme, salt, pepper, and paprika. Pulse or grind until the mixture has a coarse texture, ensuring not to over-process to maintain a crunchy consistency.

  6. Serve: Transfer the Dukkah to a serving bowl. Drizzle with olive oil if desired. Serve alongside the crispy pita pieces for dipping and enjoy the rich flavors of this Middle Eastern treat.
