Begin by soaking the green moong dal overnight in water. The next day, drain the water and leave the moong beans covered with a cloth for about 8 hours or until they sprout. Alternatively, you can purchase pre-sprouted green moong from the store. -
Heat the Oil:
In a pan or wok, heat the sesame oil over medium heat. Once hot, add the mustard seeds and let them splutter. -
Add the Spices:
After the mustard seeds start to splutter, add cumin seeds, asafoetida, chopped green chilies, and curry leaves to the oil. Sauté them for a minute or until the curry leaves become crispy. -
Cook the Moong:
Add the sprouted green moong beans to the pan. Season with salt, and stir well to combine. Cover the pan and cook the moong dal for about 3 to 4 minutes, allowing it to soften slightly while retaining its crunch. -
Final Touches:
Once the moong is cooked, remove the lid and add the grated fresh coconut, lemon juice, and chopped coriander leaves. Mix everything well. -
