Whether this delightful dish is rightfully named, I do not know, but I do know it is well worth the effort. This Dukhobor Borscht is delicious immediately upon completion and just gets better and better each time you reheat it. Thanks to Sue McNally for providing this wonderful recipe.

Ingredients

10 cups Water
7 medium Potatoes (peeled)
1 large Beet (peeled)
1 large Carrot (peeled)
2 large Onions (diced)
1 cup Celery (chopped)
1 large Green pepper (diced)
1/2 cup Dill (chopped)
1/2 cup Butter
1 can Tomatoes (diced)
1/2 head Cabbage (shredded)

Instructions

  1. In a large soup pot, begin by boiling the water.
  2. Once boiling, add four of the peeled and halved potatoes, the diced carrots, and the peeled beet, along with salt to taste.
  3. In a large frying pan, melt 6 tablespoons of butter and sauté the diced onions until they are golden brown. Add the diced tomatoes and continue to fry for a few more minutes until well combined.
  4. Carefully remove the cooked potatoes from the boiling water and mash them with the remaining 6 tablespoons of butter until creamy.
  5. Add half of the sautéed mixture from the frying pan into the soup pot.
  6. Peel and cube the remaining potatoes, adding them to the pot as well.
  7. Pour the rest of the frying pan’s contents into the pot along with an additional tablespoon of butter. Let it boil for 5 minutes.
  8. Meanwhile, in the same frying pan, fry the remaining cabbage in the rest of the butter. After a few minutes, add the chopped celery, diced green pepper, and 1 cup of the cabbage to the pot. Let it boil for about 2 minutes.
  9. Gently fold in the mashed potatoes and chopped dill, cooking for an additional 2 minutes.
  10. Finally, add the fried cabbage, allowing the borscht to simmer for a short while before serving hot.
