Instructions:

Preparation of Fish:
- Prepare the fish by cutting it into small cubes or slices.
- Heat a little oil in a heavy frying pan.
- Carefully brown the fish in the heated oil. Set aside.

- In another frying pan, fry the chopped shallots (or onion) and garlic until tender.
- Stir in the chili powder, ground ginger, turmeric, ground coriander, dried lemongrass, bay leaf, salt, and tamarind juice.
- Let this mixture simmer for about 10 minutes to allow the flavors to meld.
- Add the browned fish into the pan.
- Cover and simmer for an additional 10 minutes.

- Pour in the coconut milk and continue cooking for another 5 minutes.
- Ensure the fish is cooked through and the flavors are well combined.
