Instructions:

  1. Preparation of Fish:

    • Prepare the fish by cutting it into small cubes or slices.
    • Heat a little oil in a heavy frying pan.
    • Carefully brown the fish in the heated oil. Set aside.
  2. Preparation of Curry:

    • In another frying pan, fry the chopped shallots (or onion) and garlic until tender.
    • Stir in the chili powder, ground ginger, turmeric, ground coriander, dried lemongrass, bay leaf, salt, and tamarind juice.
    • Let this mixture simmer for about 10 minutes to allow the flavors to meld.
    • Add the browned fish into the pan.
    • Cover and simmer for an additional 10 minutes.
  3. Final Touch:

    • Pour in the coconut milk and continue cooking for another 5 minutes.
    • Ensure the fish is cooked through and the flavors are well combined.
  4. Serving:

    • Serve the Kare Ikan hot, garnished with very thin slices of cucumber and chopped mint.
    • Alternatively, you can add cucumber and mint directly into the curry for the last 2 minutes of cooking for enhanced flavor.
  5. Variation with Prawns:

    • You can also make this curry with prawns.
    • There’s no need to fry the prawns separately.
    • Simply fry them in the mixture of onion, garlic, and spices for a few minutes before adding the tamarind water.
