Title: Indonesian Ayam Kecap with Ground Spices

Ingredients:

  • 1/2 chicken (1 leg and 1 breast)
  • 10 shallots
  • 5 cloves garlic
  • Ginger, crushed and minced
  • Galangal, crushed and minced
  • 5 red curly chilies
  • 5 red bird’s eye chilies
  • Ground pepper
  • Kaffir lime leaves
  • Bay leaves
  • Carrot / potato / broccoli (optional)
  • Halawa probiotic chicken seasoning
  • Soy sauce

Steps:

  1. Blend all the spices (you can use a blender for convenience).
  2. Sauté the blended spices with crushed ginger, galangal, bay leaves, kaffir lime leaves, ground pepper, and Halawa seasoning.
  3. Once the spices are fragrant, add the chicken. Stir until evenly coated. Let it cook for about 1-2 minutes.
  4. Pour in water and soy sauce. Let it boil and reduce.
  5. Add more water and soy sauce to enhance the flavor, along with salt and vegetables if using.
  6. Allow the liquid to reduce until the sauce thickens or until it dries out according to your preference.
  7. Serve hot.
