Title: Indonesian Ayam Kecap with Ground Spices
Ingredients:
- 1/2 chicken (1 leg and 1 breast)
- 10 shallots
- 5 cloves garlic
- Ginger, crushed and minced
- Galangal, crushed and minced
- 5 red curly chilies
- 5 red bird’s eye chilies
- Ground pepper
- Kaffir lime leaves
- Bay leaves
- Carrot / potato / broccoli (optional)
- Halawa probiotic chicken seasoning
- Soy sauce
Steps:
- Blend all the spices (you can use a blender for convenience).
- Sauté the blended spices with crushed ginger, galangal, bay leaves, kaffir lime leaves, ground pepper, and Halawa seasoning.
- Once the spices are fragrant, add the chicken. Stir until evenly coated. Let it cook for about 1-2 minutes.
- Pour in water and soy sauce. Let it boil and reduce.
- Add more water and soy sauce to enhance the flavor, along with salt and vegetables if using.
- Allow the liquid to reduce until the sauce thickens or until it dries out according to your preference.
- Serve hot.
