Ayam Kecap Bumbu Jangkep: Indonesian Sweet Soy Chicken

  • 1/2 kg chicken, cut into pieces
  • 2 bay leaves
  • 1 stalk lemongrass, bruised

For the Spice Paste:

  • 3 shallots
  • 4 garlic cloves
  • 2 candlenuts
  • 5 cm fresh turmeric, peeled
  • 2 cm ginger, peeled
  • 1 teaspoon black pepper
  • 1/2 teaspoon coriander seeds
  • 1 teaspoon salt, or to taste

Instructions:

  1. Prepare the Chicken: Begin by boiling the chicken pieces in water until cooked through. Once done, drain and set aside. Next, fry the chicken in hot oil until it is half-dried and slightly crispy. Remove from heat and set aside.

  2. Make the Spice Paste: Blend or grind the shallots, garlic, candlenuts, turmeric, ginger, black pepper, coriander seeds, and salt into a smooth paste.

  3. Cook the Spice Paste: Heat a little oil in a pan over medium heat. Sauté the spice paste until fragrant and golden brown. Add the bruised lemongrass and bay leaves, and continue to sauté for another minute.

  4. Add Liquids and Sweetener: Pour in the reserved chicken broth (from boiling the chicken) and sweet soy sauce. Stir well to combine. Add brown sugar to taste, adjusting sweetness as desired.

  5. Simmer the Chicken: Add the fried chicken pieces into the pan with the spice mixture. Stir to coat the chicken evenly with the sauce. Let it simmer on low heat until the sauce thickens and the chicken is well-coated and infused with flavors.

  6. Serve: Once the sauce has thickened and the chicken is cooked to your liking, remove from heat. Transfer to a serving dish and enjoy hot with steamed rice or your favorite side dishes.
