Semur Telur Mata Sapi/Ceplok: A Delightful Indonesian Egg Stew

Indulge in the rich and savory flavors of Indonesian cuisine with this delightful recipe for Semur Telur Mata Sapi, also known as Semur Telur Ceplok. Ingredients:

  • 4 large eggs
  • 2 bay leaves
  • 1 stalk lemongrass, bruised
  • 1 cm galangal, sliced
  • 1 cm ginger, sliced
  • 1/2 large onion, sliced
  • 2 tablespoons sweet soy sauce
  • 1 1/2 teaspoons white sugar
  • Salt, to taste
  • Flavor enhancer, to taste
  • Cooking oil, for frying
  • 1 cup water
  • 10 scallions, chopped
  • 3 green or red chili peppers (adjust according to your spice preference)
  • 2 shallots
  • 7 cloves garlic
  • 3 red curly chili peppers

Instructions:

  1. Prepare the Eggs:

    • Heat a generous amount of cooking oil in a frying pan over medium heat. Fry the eggs until they are golden brown and cooked through. Once done, remove the eggs from the pan and drain them on paper towels to remove excess oil.
  2. Make the Spice Paste:

    • In a blender or mortar and pestle, grind the shallots, garlic, and red curly chili peppers into a smooth paste. Blending is recommended for convenience.
  3. Sauté the Aromatics:

    • Slice the onion, scallions, galangal, and ginger. Bruise the lemongrass stalk to release its flavors.
    • Heat a little oil in a pan over medium heat. Add the ground spice paste, sliced onion, scallions, galangal, ginger, lemongrass, and bay leaves. Sauté until the mixture becomes aromatic and the onions turn translucent.
  4. Simmer the Sauce:

    • Pour in the water and stir well. Allow the mixture to come to a simmer and cook until the sauce is well blended and the flavors have melded together.
  5. Season the Sauce:

    • Once the sauce is simmering, add the sweet soy sauce, white sugar, salt, and flavor enhancer. Adjust the seasoning to taste. Stir in the green or red chili peppers for added heat.
  6. Combine with Eggs:

    • Gently place the fried eggs into the sauce. Stir carefully to ensure the eggs are coated with the sauce. Let it simmer for a few more minutes to allow the eggs to absorb the flavors of the sauce.
  7. Serve:
