Ingredients
- 1 cup pecan halves
- 1/2 cup sugar substitute
- 3 tablespoons sugar substitute
- 2 teaspoons salt
- 1/4 cup butter
- 1 2/3 cups heavy cream
- 1 cup sour cream
- 1 egg
- 3 cups mixed berries
Instructions
- In a food processor, combine pecans, 3 tablespoons of sugar substitute, and salt. Pulse until the nuts are finely ground.
- Add the butter to the mixture and pulse until the butter pieces are the size of peas.
- In a liquid measuring cup or bowl, whisk together 2/3 cup of heavy cream, sour cream, and egg.
- Pour the cream mixture evenly over the dry ingredients in the food processor. Pulse just until combined.
- Transfer the dough to a baking sheet and divide it into 12 equal-sized pieces.
- Pat each piece into a circle and space them evenly on the baking sheet. Chill in the refrigerator for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Bake the shortcakes for about 17 minutes, or until the bottoms are golden brown.
- Cool the shortcakes on a baking sheet set on a wire rack.
- Using an electric mixer on medium speed, beat the remaining cup of heavy cream with the remaining 2 teaspoons of sugar substitute until soft peaks form.
- To assemble, dollop 1/4 cup of whipped cream onto 6 shortcakes. Top with 1/2 cup of mixed berries and cover with the remaining shortcakes.
