Ingredients

  • 1 cup pecan halves
  • 1/2 cup sugar substitute
  • 3 tablespoons sugar substitute
  • 2 teaspoons salt
  • 1/4 cup butter
  • 1 2/3 cups heavy cream
  • 1 cup sour cream
  • 1 egg
  • 3 cups mixed berries

Instructions

  1. In a food processor, combine pecans, 3 tablespoons of sugar substitute, and salt. Pulse until the nuts are finely ground.
  2. Add the butter to the mixture and pulse until the butter pieces are the size of peas.
  3. In a liquid measuring cup or bowl, whisk together 2/3 cup of heavy cream, sour cream, and egg.
  4. Pour the cream mixture evenly over the dry ingredients in the food processor. Pulse just until combined.
  5. Transfer the dough to a baking sheet and divide it into 12 equal-sized pieces.
  6. Pat each piece into a circle and space them evenly on the baking sheet. Chill in the refrigerator for 30 minutes.
  7. Preheat the oven to 375°F (190°C).
  8. Bake the shortcakes for about 17 minutes, or until the bottoms are golden brown.
  9. Cool the shortcakes on a baking sheet set on a wire rack.
  10. Using an electric mixer on medium speed, beat the remaining cup of heavy cream with the remaining 2 teaspoons of sugar substitute until soft peaks form.
  11. To assemble, dollop 1/4 cup of whipped cream onto 6 shortcakes. Top with 1/2 cup of mixed berries and cover with the remaining shortcakes.
