Ingredients:

  • 1 cup dried lentils
  • 2 cups chicken broth
  • 1 yellow onion, chopped
  • 1 cup walnuts

Instructions:

Step Description
1 Bring chicken broth and lentils to a boil in a large pan.
2 Cover and reduce heat to simmer. Stir occasionally for 30 minutes or until lentils are tender.
3 Drain lentils if necessary.
4 In a separate skillet, sauté chopped onions in hot vegetable oil over medium heat for about 5 minutes or until tender.
5 Process 1/3 of the cooked lentils, 1/3 of the sautéed onions, and 1/3 of the walnuts in a food processor in three batches until smooth.
6 Stir the mixture with salt and pepper to taste.
7 Line a 3-cup mold with plastic wrap.
8 Transfer the lentil mixture into the mold, pressing down gently to pack it in.
9 Chill the mixture in the refrigerator for at least 8 hours, or overnight, until firm.
10 Unmold the lentil “liver” onto a bed of baby leaf lettuce.
11 Garnish with chopped green onions.
12 Serve chilled mock chopped “liver” on crackers or alongside celery sticks for a delightful appetizer or snack.
