Instructions:

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper or silicone baking mats.

  2. Sift together flour, cocoa powder, baking soda, and salt in a medium bowl. Set aside.

  3. In a large bowl, using an electric mixer, beat together softened butter and sugar until fluffy.

  4. Add the egg, milk, and vanilla extract to the butter-sugar mixture. Beat until well combined.

  5. Gradually add the flour mixture to the wet ingredients, about 1/2 cup at a time, mixing well after each addition.

  6. Using an ice cream scoop (approximately 2 tablespoons), drop batter onto the prepared baking sheets, spacing them about 2 inches apart.

  7. Bake in the preheated oven for 8 to 10 minutes, or until the cookies are firm.

  8. While the cookies bake, cut the marshmallows in half crosswise.

  9. Prepare the frosting: In a medium bowl, place powdered sugar.

  10. In a small saucepan over medium-low heat, melt 6 tablespoons of unsalted butter with cocoa powder, stirring occasionally with a wooden spoon until smooth.

  11. Pour the butter-cocoa mixture into the powdered sugar. Add milk and vanilla extract, then whisk until smooth and well combined.

  12. Remove the cookies from the oven and immediately press one marshmallow half onto each cookie.

  13. Return the cookies to the oven and bake for an additional 2 to 2 1/2 minutes, or until the marshmallows begin to soften and melt.

  14. Transfer the cookies to a wire rack and let them cool completely.

  15. Once cooled, spread about 1 tablespoon of frosting on top of each cookie, ensuring the marshmallow is completely covered.

  16. Before the frosting sets, decorate the cookies with sprinkles if desired.

  17. Enjoy these delightful Surprise Cookies with a cup of milk or your favorite hot beverage!

These cookies are perfect for any occasion, from kids’ parties to holiday gatherings. The combination of soft chocolate cookie, gooey marshmallow, and creamy frosting makes them a true crowd-pleaser. Experiment with different colored sprinkles to match the theme of your event or add a festive touch for special occasions.
