Microwave Pickles Recipe

Ingredients:

  • 1 cucumber, thinly sliced
  • 1 small onion, thinly sliced
  • 3/4 cup sugar
  • 1/2 cup white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried parsley flakes

Instructions:

  1. Combine Ingredients: In a large microwave-safe bowl, combine cucumber, onion, sugar, white vinegar, salt, celery seed, mustard seeds, garlic powder, and dried parsley flakes.

  2. Microwave First Round: Microwave uncovered on high for 2 minutes.

  3. Stir: Carefully stir the mixture.

  4. Microwave Second Round: Microwave uncovered for another 2 minutes.

  5. Final Cooking: Microwave covered for 3 minutes longer, or until the mixture is bubbly and the cucumber and onion are crisp-tender.

  6. Chill: Cover the bowl and refrigerate the pickles for at least 3 hours.
