Orak-Arik Kacang TeSoKo (Egg, Sausage, Cabbage Stir-Fry)

Ingredients:

  • 2-3 cm long cut green beans (kacang panjang)
  • 1 cup diced cabbage (kol/kubis)
  • 1 chicken or beef sausage (cut into matchsticks)
  • 1 egg
  • Red chili peppers (sliced diagonally, adjust quantity to taste for spiciness)
  • 2 shallots (thinly sliced)
  • 2 cloves garlic (thinly sliced)
  • 1 bay leaf or galangal (optional)
  • 2 tablespoons cooking oil
  • Seasoning powder (to taste)
  • 2 tablespoons sweet soy sauce (kecap manis)
  • Water (as needed)
  • Salt (to taste)

Instructions:

  1. Heat the Oil: Begin by heating the cooking oil in a pan over medium heat. Once hot, add the sliced red chilies, shallots, garlic, and bay leaf (if using). Sauté until the shallots and garlic are fragrant and slightly translucent.

  2. Prepare the Egg: Push the sautéed ingredients to one side of the pan. Crack the egg into the cleared space and scramble it gently, mixing it with the sautéed ingredients.

  3. Add Sausage: Incorporate the cut sausage into the pan, stirring well to combine with the egg and aromatic vegetables.

  4. Cook the Cabbage: Add the diced cabbage to the pan, stirring briefly to combine. Allow the cabbage to cook until it begins to wilt.

  5. Incorporate the Beans: Add the green beans to the pan. Stir everything together and cook until the beans are tender yet crisp.

  6. Season the Dish: Pour in the sweet soy sauce, and if you prefer a slightly saucy dish, add a bit of water. Stir to combine, and season with seasoning powder and salt to taste.

  7. Final Taste Check: Adjust the seasoning as needed, and cook for an additional minute or two until everything is well combined and heated through.

  8. Serve: Transfer the Orak-Arik Kacang TeSoKo to a serving dish. Enjoy this flavorful and satisfying stir-fry on its own or with a side of steamed rice.
