Black Pepper Tofu with Onion

Ingredients:

  • 5 large cubes of tofu
  • Cooking oil
  • For the spice paste:
    • 5 cloves garlic
    • 1 thumb-sized piece of ginger
    • 1 teaspoon black pepper (heaping)
    • 1 tablespoon oyster sauce (Lee Kum Kee recommended)
    • 1 tablespoon palm sugar
    • A pinch of salt
    • 1 teaspoon mushroom broth powder (Totole recommended)
  • 2 tablespoons cornstarch mixed with water
  • For garnish:
    • 1 large onion

Instructions:

  1. Prepare the Tofu: Heat oil in a pan over high heat. Fry the tofu cubes until the surface is crisp and golden brown. Remove from heat and set aside.

  2. Make the Spice Paste: In a blender or food processor, combine the garlic, ginger, and black pepper. Blend until smooth.

  3. Cook the Spice Paste: Heat a bit of oil in a pan over medium heat. Add the spice paste and sauté until fragrant and cooked through.

  4. Add Liquids: Pour in about 250 ml of water and bring to a boil.

  5. Combine Ingredients: Add the fried tofu to the pan, followed by the oyster sauce, palm sugar, salt, and mushroom broth powder. Stir well to combine.

  6. Adjust Consistency: Gradually add the cornstarch mixture, stirring constantly until the sauce reaches your desired thickness.

  7. Finish Cooking: Continue to cook until the sauce reduces slightly. About 5 minutes before finishing, add the sliced onion and stir until just tender.

  8. Serve: Once the sauce has thickened and the onions are cooked, serve hot.
