Black Pepper Tofu with Onion
Ingredients:
- 5 large cubes of tofu
- Cooking oil
- For the spice paste:
- 5 cloves garlic
- 1 thumb-sized piece of ginger
- 1 teaspoon black pepper (heaping)
- 1 tablespoon oyster sauce (Lee Kum Kee recommended)
- 1 tablespoon palm sugar
- A pinch of salt
- 1 teaspoon mushroom broth powder (Totole recommended)
- 2 tablespoons cornstarch mixed with water
- For garnish:
- 1 large onion

Prepare the Tofu: Heat oil in a pan over high heat. Fry the tofu cubes until the surface is crisp and golden brown. Remove from heat and set aside.

Make the Spice Paste: In a blender or food processor, combine the garlic, ginger, and black pepper. Blend until smooth.

Cook the Spice Paste: Heat a bit of oil in a pan over medium heat. Add the spice paste and sauté until fragrant and cooked through.

Add Liquids: Pour in about 250 ml of water and bring to a boil.

Combine Ingredients: Add the fried tofu to the pan, followed by the oyster sauce, palm sugar, salt, and mushroom broth powder. Stir well to combine.

Adjust Consistency: Gradually add the cornstarch mixture, stirring constantly until the sauce reaches your desired thickness.

Finish Cooking: Continue to cook until the sauce reduces slightly. About 5 minutes before finishing, add the sliced onion and stir until just tender.

Serve: Once the sauce has thickened and the onions are cooked, serve hot.
