Dim Sum Ayam is a delightful Indonesian treat, blending the rich flavors of minced chicken and shrimp with a savory dipping sauce. This recipe will guide you through creating these bite-sized wonders, perfect for a family meal or special gathering.
Ingredients:
For the Filling:
- 350 grams ground chicken
- 250 grams minced shrimp
- 4 packages of ready-made wonton wrappers
- 1 medium onion, finely chopped
- 2 stalks green onions, finely chopped
- 2 tablespoons tapioca flour
- 1 tablespoon cornstarch
- 2 tablespoons sesame oil
- 1 tablespoon oyster sauce
- 1 tablespoon granulated sugar
- Salt to taste
- 5 cloves garlic, minced
- 2 tablespoons ground black pepper
- 1/2 packet of Royco seasoning (optional)
- 2 eggs
- 1 carrot, grated (for garnish)
For the Sauce:
- 10 red chili peppers
- 7 red bell peppers
- 4 cloves garlic
- 1 teaspoon cooking vinegar
- 2 cups water
- Salt to taste
- 5-6 tablespoons granulated sugar
- 3 tablespoons chili sauce
- 1 tablespoon cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water)

Prepare the Filling:
- In a large mixing bowl, combine the ground chicken and minced shrimp.
- Add the finely chopped onion, green onions, tapioca flour, cornstarch, sesame oil, oyster sauce, sugar, salt, minced garlic, ground black pepper, and Royco seasoning (if using).
- Mix all the ingredients thoroughly until well combined.

Assemble the Dim Sum:
- Take a wonton wrapper and place a small spoonful of the filling in the center.
- Moisten the edges of the wrapper with water to help seal it.
- Fold and seal the wrapper around the filling, shaping it to your preference.
- Repeat this process until all the filling is used.

- Arrange the filled wontons on a steaming rack lined with parchment paper.
- Steam over boiling water for about 15-20 minutes or until the filling is cooked through and the wrappers are tender.

- In a saucepan, combine 2 cups of water with sugar and salt. Bring to a boil.
- Stir in the blended pepper mixture, cooking vinegar, and cook for about 5 minutes.
- Add the chili sauce and mix well.
- Gradually add the cornstarch slurry, stirring constantly until the sauce thickens and starts to bubble.
- Remove from heat and allow to cool.
