- 10 cups water
- 1 tablespoon olive oil
- 1 chorizo sausage, diced
- 1 tablespoon minced garlic
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 1/2 teaspoon ground pepper
- 1/2 onion, chopped
- 1/2 cup chopped celery
- 1/2 cup diced carrot
- 1/2 cup diced green pepper
- 1/2 cup sliced mushrooms
- 1/2 cup sliced pepperoni
- 1/2 cup sliced green olives
- 1/2 cup sliced black olives
- 2 cans (14.5 ounces each) Italian-style tomatoes
- 1 can (10.75 ounces) tomato soup
- 2 cups rotini pasta, cooked according to package directions
- Salt and pepper, to taste
- Mozzarella cheese and garlic bread, for serving
Instructions:
- Heat a lightly oiled kettle over medium heat. Add diced chorizo sausage and brown until cooked through, stirring occasionally.
- Stir in minced garlic, dried basil, dried oregano, and ground pepper. Season with salt and pepper to taste.
- Once fragrant, add chopped onion, celery, carrot, and diced green pepper to the kettle. Cook until the vegetables begin to caramelize, approximately 10 minutes.
- Meanwhile, in a separate pan, cook rotini pasta according to package directions. Once cooked, drain and set aside.
- Pour water into the kettle, reserving about a cup for later use. Allow the soup mixture to simmer for 30-40 minutes, stirring occasionally.
- To the simmering soup, add sliced mushrooms, pepperoni, green olives, black olives, Italian-style tomatoes, and tomato soup. Adjust the consistency by adding reserved water if necessary.
- Continue to simmer the soup for an additional 30 minutes, allowing the flavors to meld together. Towards the end of the cooking time, add the cooked rotini pasta and stir to combine.
- Taste the soup and adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with a sprinkle of mozzarella cheese on top and accompanied by garlic bread on the side.
