Crab and Shrimp in Egg Sauce

Ingredients:

  • 1 kg (2.2 lbs) fresh crab or mud crab, cleaned
  • 1 kg (2.2 lbs) large shrimp, peeled and deveined
  • 2 large eggs, beaten
  • 3 large ripe tomatoes, blended into a smooth sauce
  • 5 cloves garlic, finely chopped
  • 2 large onions, coarsely chopped
  • 4 stalks green onions, roughly sliced
  • 2 red chilies, finely sliced (adjust to taste)
  • 1 thumb-sized piece of ginger, thinly sliced
  • 2 kaffir lime leaves
  • 1 small stalk lemongrass, bruised
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons soy sauce
  • A splash of fish sauce
  • Salt to taste
  • Seasoning to taste
  • Sugar to taste
  • Cooking oil or butter for sautéing

Instructions:

  1. Sauté Aromatics:

    • Heat a generous amount of cooking oil or butter in a large pan over medium heat. Add the finely chopped garlic and cook until fragrant, about 1 minute.
    • Stir in the blended tomatoes and cook for another 2 minutes until the mixture begins to simmer.
  2. Add Spices and Herbs:

    • Introduce the finely sliced red chilies, ginger, kaffir lime leaves, and bruised lemongrass. Stir well and cook until the mixture starts to bubble.
  3. Incorporate Seafood:

    • Add the cleaned crab to the pan. Gently break the crab shells slightly to allow the flavors to penetrate. Cook for about 5 minutes.
    • Add the shrimp, fish sauce, soy sauce, salt, seasoning, and sugar to taste. Stir thoroughly to combine all the ingredients.
  4. Mix in Vegetables:

    • Toss in the coarsely chopped onions and sliced green onions. Continue to stir for another 3 minutes.
    • Sprinkle in the ground black pepper and adjust the seasoning as needed.
  5. Add Beaten Eggs:

    • Slowly pour the beaten eggs into the pan while stirring gently to create a smooth, creamy sauce. Cook for an additional 2-3 minutes until the eggs are fully cooked and the sauce has thickened.
  6. Final Adjustments:

    • Taste the sauce and adjust seasoning, sugar, or salt if necessary.
  7. Serve:
