Ingredients

Quantity Ingredient
5 pieces Chicken thighs
4 pieces Firm tofu
1 stalk Lemongrass (crushed)
2 leaves Salam leaves (Indonesian bay leaves)
2 leaves Kaffir lime leaves
1 piece Lime (juiced)
65 ml Instant coconut milk (Kara brand)
500 ml Chicken broth (from boiled chicken)
5 pieces Red bird’s eye chilies (more if desired)
To taste Fried shallots
To taste Salt, sugar, and seasoning
For the spice paste:
6 cloves Shallots
3 cloves Garlic
1 cm Galangal
1 cm Ginger
2 cm Turmeric
3 pieces Candlenuts
½ tsp Ground white pepper
½ tsp Ground coriander

Instructions

  1. Preparation of Chicken: Clean the chicken thoroughly and marinate it with the juice of one lime. Let it rest to absorb the flavor, then rinse again.

  2. Boiling the Chicken: Boil the chicken until cooked through, reserving 500 ml of the broth for later use.

  3. Sautéing the Spice Paste: In a skillet, sauté the ground spice paste until fragrant. Add the crushed lemongrass, salam leaves, and kaffir lime leaves, stirring to combine.

  4. Cooking the Main Ingredients: Introduce the chicken and tofu to the skillet, ensuring they are well coated with the spices. Pour in the reserved chicken broth and bring to a boil. Don’t forget to add the whole red chilies for an extra kick!

  5. Final Seasoning: Adjust the flavors with salt, sugar, and seasoning according to your taste. Gradually stir in the coconut milk, maintaining a low heat to prevent the coconut from separating.

  6. Serving: Once everything is cooked through and the chicken is tender, remove from heat. Garnish with fried shallots before serving.

This Opor Ayam + Tahu is best enjoyed with steamed rice, allowing the rich flavors of the sauce to meld beautifully with each bite. Enjoy this ultimate comfort dish, perfect for family gatherings or special occasions!
