Description:

Delight in this hearty and wholesome Crock Pot Potato Stuffed Cabbage, a comforting dish that combines tender cabbage leaves filled with a savory potato and rice mixture, slow-cooked to perfection. Perfect for a cozy family dinner or special gathering.

Ingredients:

  • 1 head cabbage
  • 5 potatoes
  • 2 onions
  • 1/2 cup rice
  • 1 tbsp dried dill weed
  • 1/4 tsp black pepper
  • 2 tomatoes, diced
  • 1 apple, diced
  • 1/4 tsp ground ginger

Instructions:

  1. Prepare Cabbage Leaves:

    • Parboil the cabbage and carefully separate the leaves.
    • Slice off the thick part of the stalk from each leaf without cutting into the leaf itself.
  2. Prepare Filling:

    • Grate the potatoes, the small inner leaves of cabbage, and one of the onions. Mix them together.
    • Add rice, dried dill weed, and black pepper to the potato mixture.
  3. Prepare Cabbage Rolls:

    • Beat the egg whites until frothy and fold them into the potato mixture.
    • Set aside a few of the largest cabbage leaves.
    • Fill each remaining cabbage leaf with about 2 tablespoons of the potato mixture.
    • Fold up the bottom of each leaf, then fold in the sides, and roll up the cabbage leaf. Secure with toothpicks if needed.
  4. Assemble in Crock Pot:

    • Slice the reserved cabbage leaves and line the bottom of the crock pot with them.
    • Slice the second onion and layer it on top of the cabbage leaves.
    • Add diced tomatoes, apple, and ground ginger over the onions.
  5. Cooking:

    • Place the rolled stuffed cabbage leaves into the crock pot.
    • Cover and cook on low heat for 4 to 5 hours, or until the cabbage leaves are tender and the filling is cooked through.
  6. Serving:

    • Once cooked, carefully remove the stuffed cabbage rolls from the crock pot.
    • Serve hot, garnished with additional fresh herbs if desired.

Enjoy your Crock Pot Potato Stuffed Cabbage, a wholesome and satisfying dish that brings together the flavors of tender cabbage, hearty potatoes, and aromatic spices in every bite! Perfect for sharing with loved ones.
