Telur Ceplok Kecap: Savory Fried Eggs in Sweet Soy Sauce

Ingredients:

  • 3 eggs (adjust quantity based on preference)
  • 3 shallots, finely chopped
  • 3 cloves of garlic, minced
  • 1 large red chili, seeds removed and sliced
  • 1 tomato, diced
  • 3 stalks of celery, chopped
  • A pinch of ground nutmeg
  • A pinch of ground black pepper
  • 1/2 teaspoon oyster sauce
  • Sweet soy sauce (to taste)
  • Salt (to taste)
  • Water (as needed)

Instructions:

  1. Fry the Eggs:
    Heat a skillet with a small amount of oil over medium heat. Fry each egg individually until the whites are crispy and the yolks are cooked to your liking. Set aside on a plate.

  2. Prepare the Sauce:
    In the same skillet, add a bit more oil if necessary and sauté the shallots and garlic until fragrant and translucent. Add a splash of water and a generous amount of sweet soy sauce, adjusting to taste. Stir in salt, ground nutmeg, and black pepper. Then, add the oyster sauce and mix well. Adjust the seasoning if needed.

  3. Combine Ingredients:
    Gently add the fried eggs to the skillet along with the diced tomato and sliced chili. Allow the mixture to cook together until the tomatoes are softened and the flavors meld, about 5 minutes.

  4. Finish and Serve:
    Stir in the chopped celery and cook for an additional minute until the celery is slightly wilted. Remove from heat and transfer to a serving dish.
