Instructions

  1. Prepare the Egg Mixture:

    • In a bowl, beat the eggs until well combined. Gently fold in the cubed tofu, ensuring each piece is coated in the egg mixture.
  2. Fry the Tofu and Egg Mixture:

    • Heat a generous amount of oil in a skillet over medium heat. Once hot, pour in the tofu and egg mixture. Fry until the eggs are set and the tofu is golden brown on all sides. Remove from the skillet and drain on paper towels to absorb excess oil.
  3. Make the Spice Paste:

    • In the same skillet, add a little more oil if needed. Fry the garlic, peanuts, and optional chilies until fragrant and golden brown. Transfer the mixture to a mortar and pestle (or a food processor) and grind until smooth. Gradually add sugar, salt, and the fermented shrimp paste (petis), continuing to mix until fully combined. Slowly add hot water, little by little, until you achieve a sauce-like consistency. Taste and adjust seasoning as desired.
  4. Prepare the Bean Sprouts:

    • Soak the bean sprouts in hot water for a few minutes until they soften, then drain.
  5. Assemble the Dish:

    • On a serving plate, arrange the fried tofu and egg mixture. Top with the ground spice paste and scatter the softened bean sprouts over the top.
  6. Serve:
