Shrimp Roll Soup Recipe
Ingredients
- 500 grams shrimp, finely chopped
- 3 cloves garlic, minced (for shrimp mixture)
- Salt, to taste
- Pepper, to taste
- 2 carrots, sliced
- 1 medium broccoli
- 2 cloves garlic, minced (for the soup)
- 1 small onion, diced
- 4 eggs, beaten (for omelet)
- 1 scallion, finely chopped
- Chicken stock, enough for the soup
- Celery and additional scallions (optional)

Prepare the Shrimp Filling:
- In a mixing bowl, combine the finely chopped shrimp with the minced garlic, chopped scallion, salt, and pepper. Mix well to ensure the seasoning is evenly distributed.

Make the Egg Roll:
- Heat a non-stick pan over medium heat and pour in a portion of the beaten eggs to form a thin omelet. Cook until set and slightly golden.
- Spread the shrimp mixture evenly over the omelet. Carefully roll it up tightly. Steam the rolled omelet for approximately 20 minutes until the shrimp is cooked through.

- Bring the chicken stock to a boil in a large pot.
- Add the sliced carrots and cook until they start to soften.
- In a separate pan, sauté the minced garlic and diced onion until fragrant and translucent. Add this to the pot with the carrots.

- Wash the broccoli thoroughly and cut into florets. Blanch in salted water briefly to ensure it’s clean and crisp. If you prefer a firmer texture, add it to the soup later in the cooking process. Alternatively, you can cook it separately.

- Gently slice the steamed shrimp rolls into bite-sized pieces and add them to the soup.
- Let everything simmer together for a few more minutes until all components are heated through and the flavors meld together.
