Shrimp Roll Soup Recipe

Ingredients

  • 500 grams shrimp, finely chopped
  • 3 cloves garlic, minced (for shrimp mixture)
  • Salt, to taste
  • Pepper, to taste
  • 2 carrots, sliced
  • 1 medium broccoli
  • 2 cloves garlic, minced (for the soup)
  • 1 small onion, diced
  • 4 eggs, beaten (for omelet)
  • 1 scallion, finely chopped
  • Chicken stock, enough for the soup
  • Celery and additional scallions (optional)

Instructions

  1. Prepare the Shrimp Filling:

    • In a mixing bowl, combine the finely chopped shrimp with the minced garlic, chopped scallion, salt, and pepper. Mix well to ensure the seasoning is evenly distributed.
  2. Make the Egg Roll:

    • Heat a non-stick pan over medium heat and pour in a portion of the beaten eggs to form a thin omelet. Cook until set and slightly golden.
    • Spread the shrimp mixture evenly over the omelet. Carefully roll it up tightly. Steam the rolled omelet for approximately 20 minutes until the shrimp is cooked through.
  3. Prepare the Soup:

    • Bring the chicken stock to a boil in a large pot.
    • Add the sliced carrots and cook until they start to soften.
    • In a separate pan, sauté the minced garlic and diced onion until fragrant and translucent. Add this to the pot with the carrots.
  4. Season the Soup:

    • Season the soup with salt and pepper to taste. If desired, add a dash of TOTOLE (seasoning powder) for extra flavor.
    • Optionally, stir in chopped celery and additional scallions for added freshness.
  5. Add the Broccoli:

    • Wash the broccoli thoroughly and cut into florets. Blanch in salted water briefly to ensure it’s clean and crisp. If you prefer a firmer texture, add it to the soup later in the cooking process. Alternatively, you can cook it separately.
  6. Combine and Serve:

    • Gently slice the steamed shrimp rolls into bite-sized pieces and add them to the soup.
    • Let everything simmer together for a few more minutes until all components are heated through and the flavors meld together.
  7. Garnish and Enjoy:

    • If you like, garnish with additional scallions and fresh celery leaves before serving. Serve hot and enjoy!
