Instructions

Step 1: Prepare the Filling

  1. Start by heating a skillet or kadai (a deep pan) over medium heat.
  2. Add the ghee to the pan and allow it to melt. Once melted, add the chopped dates and dried figs.
  3. Stir the mixture occasionally, cooking it until the dates and figs become soft and stewed. They should begin to pull away from the sides of the pan and form a ball-like consistency.
  4. Once the mixture has thickened and become mushy, turn off the heat and set the pan aside to cool.
  5. Once cooled, take small portions of the mixture and roll them into marble-sized balls. Set these aside for later.

Step 2: Prepare the Sesame Mixture

  1. In a separate pan or kadai, lightly toast the sesame seeds, desiccated coconut, chopped almonds, and melon seeds. Toast these on low heat for 3-4 minutes until they release a nutty aroma.
  2. While the mixture is still warm, transfer it to a grinder. Add jaggery to the mixture and grind it finely.
  3. Next, add the dry ginger powder, cardamom powder, and nutmeg powder to the mixture. Pulse the grinder a couple of times to ensure everything is well incorporated.
  4. You will notice that the sesame seeds and coconut have released their oils, making the mixture crumbly. When you hold a portion in your fist, it should come together slightly. If it doesn’t, pulse the mixture a few more times to help it bind.

Step 3: Shape the Ladoos

  1. Take a spoonful of the sesame mixture and place it in the palm of your hand. Gently press it to form a small well in the center.
  2. Place a filling ball (made from dates and figs) in the center of the well. Carefully fold the sides over to enclose the filling, then gently roll it into a round ladoo shape.
  3. Repeat this process until you have used all the sesame mixture and date-fig filling.
  4. If desired, roll the ladoos in desiccated coconut or finely chopped almonds for a decorative touch.

Step 4: Storing and Serving

  1. Store the prepared Gujarati Kachariyu in an airtight container to maintain their freshness.
  2. Serve the ladoos as a festive treat or as a mid-morning snack alongside a hot cup of masala chai. They also make for a delightful snack in lunchboxes or at tea-time.
