- 5 hard-boiled eggs, peeled and fried until golden brown
- 3 pieces of white tofu, fried until crispy
- Spice Paste:
- 7 shallots
- 5 cloves of garlic
- 9 large red chilies
- 3 red bird’s eye chilies
- 3 candlenuts
- Water (as needed)
- Fine salt (to taste)
- Granulated sugar (to taste)

Begin by blending the shallots, garlic, red chilies, bird’s eye chilies, and candlenuts into a smooth paste. You can use a traditional mortar and pestle or a food processor for this step. -
Cook the Spice Paste:
Heat a little oil in a skillet over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste, indicating it is cooked through. -
Add Water:
Once the spice paste is fragrant and cooked, add a sufficient amount of water to the pan to create a sauce. Allow it to come to a gentle boil. -
Incorporate Eggs and Tofu:
Gently add the fried eggs and tofu into the simmering sauce. Stir carefully to coat the eggs and tofu with the sauce. Let it simmer for a few minutes, allowing the flavors to meld. -
Season the Dish:
Season with fine salt and granulated sugar to taste. Stir well and adjust the seasoning according to your preference. -
