Ingredients:
- 1 chicken thigh, cut into small pieces and briefly boiled with ginger, then drained
- 1 onion, sliced to preference
- 1 tomato, sliced
- 4 cloves garlic, smashed and sliced
- 2 shallots, sliced
- 3 red chilies, sliced diagonally
- 1 tablespoon finely ground black pepper
- 1 tablespoon Saori oyster sauce
- 3 tablespoons sweet soy sauce
- To taste: sugar, salt, and seasoning

Sauté Aromatics: In a hot pan, sauté the garlic, shallots, and red chilies until fragrant.

Add Chicken: Add the boiled chicken pieces to the pan and stir briefly.

Season: Incorporate the sweet soy sauce, oyster sauce, and finely ground black pepper. Mix well.

Simmer: Pour in a bit of water, then add sugar, salt, and seasoning to taste. Cook until the mixture comes to a boil and the liquid reduces slightly.

Finish: Add the sliced onion and tomato to the pan. Cook until the onion is tender.
