Ayam Dan Tempe Goreng Serundeng

Ingredients

Chicken breast 1 piece
Grated coconut 1/2 coconut
Tempeh 2 pieces (thickly sliced)
Garlic 3 cloves (mashed)
Turmeric 1 finger-sized piece (mashed)
Salt To taste
Royco seasoning To taste
Bay leaves 3 leaves
Lemongrass 2 stalks
Water As needed

Instructions

  1. Begin by washing the chicken breast thoroughly. In a pot, bring water to a boil, then add the chicken. Once boiled, drain the chicken and set it aside.

  2. In the same pot, bring water to a boil again. Add the mashed spices, bay leaves, and lemongrass. Allow the mixture to simmer until aromatic.

  3. Once fragrant, add the chicken back into the pot, stirring to combine. Let it simmer for 10-15 minutes.

  4. Introduce the sliced tempeh into the pot. Continue cooking until the water level reduces slightly.

  5. Next, add the grated coconut, mixing well until the liquid evaporates and the coconut integrates beautifully with the chicken and tempeh.

  6. Finally, remove from heat and serve the dish warm, ideally accompanied by spicy tomato sambal for a delightful kick.
