Sambal Terong with Ikan Tamban

Ingredients

For the Eggplant and Fish:

  • 5 red curly chilies
  • 6 shallots
  • 2 garlic cloves
  • Chicken-flavored Royco seasoning (or similar)
  • Salt, to taste
  • Soy sauce or sugar, to taste
  • Cooking oil, for frying

Instructions

  1. Prepare the Eggplant:
    Begin by washing and cutting the eggplants into bite-sized cubes. Ensure they are well cleaned to remove any bitterness.

  2. Fry the Eggplant:
    In a frying pan, heat a generous amount of cooking oil over medium heat. Fry the eggplant cubes until they turn golden brown and soft. Once done, remove them from the pan and let them drain on paper towels to absorb excess oil.

  3. Fry the Fish:
    In the same pan, add a bit more oil if necessary and fry the ikan tamban (or salted fish) until cooked through and slightly crispy. Set aside.

  4. Make the Spice Paste:
    Using a mortar and pestle or a food processor, blend the bird’s eye chilies, curly chilies, shallots, and garlic until you achieve a smooth paste. This aromatic mixture will serve as the base of your dish.

  5. Sauté the Spice Paste:
    In the pan used for frying, add the blended spice paste and sauté over medium heat until fragrant and aromatic, about 2-3 minutes.

  6. Combine Ingredients:
    Add the fried eggplant and fish into the pan with the sautéed spices. Gently stir to combine all the ingredients, ensuring the eggplant and fish are coated with the spice mixture.

  7. Season the Dish:
    Season with salt, Royco seasoning, and soy sauce (or sugar) according to your taste preferences. Mix well and let the flavors meld together for a few minutes, allowing the dish to cook through and the seasonings to infuse.

  8. Serve and Enjoy:
    Once everything is well combined and the dish is heated through, remove it from the heat. Serve hot, either on its own or with steamed rice for a complete meal.
